As we all know, Honey can be extracted directly from beehives and consumed, so in many places in the world if you are close to beekeeping sites you might be able to go in person and buy the natural, pure, raw Honey from beekeepers, sometimes beekeepers take their Honeys to the local market and sell them to the customers, also there are people who buy the Honey from the beekeepers and sell them in market or their shops.
The volume of Honey sold in the above mentioned channels would not be huge and most of the time only bulk products are available without labels and proper certification, in order to supply Honey to everyone’s including the main customers of Honey, which are citizens of big cities, we would need to have Honeys packed properly and be available in Supermarkets and Shops, to achieve that we need to have Honey Manufactures.
Honey manufacturing process would be including, testing and analysing Honeys, packing the approved quality products according to their own standards and national standards & supply the customers.
Manufactures source the Honey from beekeepers, after careful selection, supply the customers both in bulk and pre-pack, manufactures are the best option to supply you Honey, because as a first step, they would buy only the quality products after careful testing, they can supply products according to your requests, manufactures can also provide you all the necessary documents, you can visit their factory and laboratory to make sure all the standards are in place.
Please note that Honey could be supplied by beekeepers directly or by unknown sources and middlemen, if you are going to purchase from them, you have to rely on their honestly because there is no official documents or analysis to support their claims.
When we are referring to Honey manufactures in this article, we mean the ones they have licences from related authorities such as food health & safety or standard organisations…, needless to say that all the Honeys even the fake ones are probably manufactured somewhere or filled in the basements.
Manufactures can have their own beekeeping farms or source the Honey from trusted beekeepers, either way, manufactures source the best quality of Honeys which would pass the analysis and is according to the standards, normally to finalize the purchase, the sample of Honey to be sent to the factory for complete testing and after the approval of the sample, shipment would be sent to the factory, Sourcing and buying Honeys would be done by procurement department.
At the time of shipment’s arrival to the factory, sample would be taken to the lab and would be checked for Sucrose, HMF, Brix …, if the results of analysis confirm the quality and authenticity of the incoming Honeys, they would be sent to the production lines.
Honey would arrive to the storage area in 27kg metal cans, at the time of arrival each individual consignment would be given a lot number which would present the source of the Honey and all the other related necessary information.
The day before production, selected metal cans would be sent to the heating room which is set on 24 to 28°C and stay there overnight in order to make it easy to discharge the Honey from the metal cans.
Then the metal cans would be transferred to discharge table where each individual metal can would be discharged to the special tank and check for the purity, if the quality is acceptable then the drain valve below the tank would be opened and The Honey would go through steel pipe to go to the main processing tank, up to this stage there is no different between raw or regular Honey Production, but as of now each one of them has separate tanks and the whole process is unique for each ones compare to the other.
Raw Honey is not filtered or pasteurized, so the manufacturing process is shorter than producing regular Honeys.
Raw Honey is best described as Honey as it exists in the beehive. It is made by extracting Honey from the Honeycombs of the hive and separate the Honey from impurities like beeswax and dead bees.
At the factory the Honey is poured into the special tank for raw Honey production and heated to about 30 t0 35°C to melt out the crystals. Then it is held at that temperature for 24 hours. Any extraneous bee parts or pollen rise to the top and would then be removed, Once strained, Raw Honey is bottled and ready to be consumed.
Raw natural Honey is a good source of antioxidants, Raw natural Honey contains an array of plant chemicals that act as antioxidants which help to protect your body from cell damage due to free radicals, it also helps for digestive issues, very useful for Soothe a sore throat.
On the other hand, the production of regular Honey involves several more steps before it is bottled such as pasteurization and filtration.
Pasteurization is a process that destroys the yeast found in Honey by applying high heat. This helps extend the shelf life and makes it smoother.
Also, filtration further removes impurities like debris and air bubbles so that the Honey stays as a clear liquid for longer. This is aesthetically appealing to many consumers.
At the manufacturing site, the Honey is poured into processing tank and heated to about 30 to 35°C to melt out the crystals. Then it is held at that temperature for 24 hours. Any extraneous bee parts or pollen rise to the top and are skimmed off.
Then the Honey is heated to about 65 to 68°C, Honey then filtered and cooled back down to 35°C, once filtration complete, regular & heated Honey is bottled and ready to be consumed.
Although these heating procedures remove some of the Honey’s healthful properties, consumers prefer the lighter, bright-coloured Honey that results.
Once the Honeys bottled and labelled, again samplings would be done at the end of production lines in order to make sure the finished products are 100% according to standards, samples would be sent to the lab again and the departure of products from the factory pending the result of the lab, QA’s also check the putting data such as production date and expiration date and do the final checks on labels and packaging and presentation.
When the results of analysis are ready and if there are no issues, the finished products are wrapped and would be sent to the customers.
