Honey is one of the purest foods that nature offers to us which has been known since antiquity, Honeybees collect nectar and pollen from various plants, process and store this natural sweet substance in their Honeycombs, Honey that derives from different regions can differ in color, taste, and aroma because they are created using different plants and in different climatic conditions.
In general, there are 3 different types on Honey available in the market as follows:
1- 100% fake Honey, bee has no involvement in its production (Should not be called Honey because is melted sugar)
2- half fake Honey and natural Honey, bees are fed with sugar by beekeepers
3- Pure Honey, bees have collected nectar of plants and turned it to Honey, so no feeding or additives & flavouring, Pure Honey is the only Honey has unique medicinal and therapeutic properties.
A Honey test will ensure the Honey isn’t adulterated or has high-fructose corn syrup added to it.
Some study shows that almost 65% of all Honey brands found in grocery stores are not all-natural.
What is in the Jars is a processed product that has been stripped of all its pollen, nutrients, and most of its enzymes, there are companies even add more artificial sweeteners to make the Honey cheaper and to increase of the production volume.
A Honey test will be able to detect whether or not Honey is authentic or is adulterated.
Honey analysis is carried out to verify the quality of this food, its authenticity, as well as to establish, if possible, its botanical and geographical origins.
For these purposes, the most common determinations are melissopalynology, sensory, biological and physicochemical methods.
All the standards mentioned in this article are according to European Standards for natural Honey.
An organic compound known as 5-hydroxymethylfurfural (HMF) is formed from reducing sugars in Honey and various processed foods in acidic environments when they are heated through the Maillard reaction.
The value of HMF is used to assess the freshness of the sample, the amount of heat the Honey received and the potential adulteration, the HMF content should not exceed 40 mg/kg after processing or blending. However, this value may reach 80 mg/kg if the Honey comes from a tropical origin.
HMF occurs naturally in most Honeys and usually increases with the age and heat treatment of Honey.
Diastase activity reflects the freshness of the Honey and can also be used as an indicator for adulteration.
Diastase activity, which is measured after processing and blending, in general should not be less than 8 Schade units and in the case of Honeys with low natural enzyme content not less than 3 Schade units.
Diastase activity is a Honey quality parameter used to determine if Honey has been extensively heated during processing or during the transient heating, it was observed a decrease in the diastase activity related to an increase in temperature in all assays.
Honey contains a number of acids which include amino acids and organic acids, according to the National Honey Board, the acidity of Honey ranges from a pH of about 3.4 to about 6.1, with an average of 3.9. The acidity of any Honey is directly related to the floral sources that created it.
The low pH of Honey inhibits the presence and growth of microorganisms, its low pH makes Honey compatible with many food products in terms of pH and acidity, acids are an important component of the flavour and aroma of mono-floral Honeys, acids also contribute to a manufactured product’s flavour profile.
In general, Honey is acidic with a pH ranging between 3.5 and 4.5.
The duration of storage, adulteration with sugar and botanical origin can affect these values.
The free acidity of Honey may not be greater than 50 milliequivalents of acid per 1000g.
The water content is an important factor in Honey analysis in order to determine the shelf life of the Honey., the higher the moisture, the faster the fermentation due to the yeast activity, according to European standards, the moisture content should not exceed 20% but the ideal numbers would be 14 to 18%.
Honey is composed primarily of water and two sugars: fructose and glucose.
A large variety of sugars are measured by means of both NMR and HPLC.
This sugar can act as an indicator for botanical origin, particularly to distinguish between Honeydew and blossom Honey.
Sugars in Honey are produced by enzymatic sucrose hydrolysis and trans glycosylation. The content of fructose, glucose, sucrose, as well as sugars such as maltose, turanose, raffinose, melezitose, and isomaltose is determined by high performance liquid chromatography (HPLC) with infrared (IR) detection.
According to the National Honey Board website, Honey is a supersaturated sugar solution with approximately 17.1 percent water. Fructose is the predominant sugar at 38.5 percent, followed by glucose at 31 percent.
Most of natural Honeys has below 5% sucrose level and lower sucrose means higher purity and quality in general.
The C4-sugar content of Honey is an indicator for adulteration by cheap sugar from corn and sugar cane. This value can be calculated from the difference in δ13C between the entire Honey and its protein fraction.
NMR testing is very advanced test that require very expensive equipment, it uses nuclear energy transfer principles to identify molecular structures. The whole process is applying a magnetic field to a sample and measuring the wavelength emitted by the energy transfer of the charged nuclei. This process relies on the spin of the element’s nucleus.
NMR test is regarded as a fingerprint test for detecting Honey adulteration throughout the world. The reason for this is, it accurately detects the false declaration of botanical and geographical origin of the Honey.
Most of Honey manufacturers and laboratories in the world analysis Honey for HMF, pH and Acidity, water content, diastase activity and sugars, Isotopes and NMR tests are advanced tests and is done very rarely.
At the time of shipment’s arrival to the factory, sample would be taken to the lab and would be checked for Sucrose, HMF, Brix …, if the results of analysis confirm the quality and authenticity of the incoming Honeys, they would be sent to the production lines.
Once the Honeys bottled and labelled, again samplings would be done at the end of production lines in order to make sure the finished products are 100% according to standards, samples would be sent to the lab again and the departure of products from the factory pending the result of the lab, QA’s also check the putting data such as production date and expiration date and do the final checks on labels and packaging and presentation.
